Whispers of the Vineyard is more than just a dinner or wine & dine event—it is an exploration of taste, crafted in collaboration with the esteemed local vintners at Delicata Winery. Together, we are bringing to life a gastronomic experience that pays homage to tradition while embracing culinary innovation.
An evening of elegance
Set against the elevated backdrop of Level 11 at AX ODYCY Hotel in Qawra, Minoa offers an atmosphere of elegance and exclusivity that perfectly complements the evening’s journey. Guests will be guided through a thoughtfully curated six-course tasting menu, each dish paired with a selected Delicata wine to enhance and elevate the flavours on the plate. From the first delicate notes to the final indulgent bite, this is a dining experience designed to linger in both memory and palate.

The menu, carefully crafted by Minoa’s culinary team, begins with the bold refinement of beef tartare, setting the tone for the evening. Handcrafted farfalle follows, bringing artisanal warmth and texture, before yielding to the rich succulence of duck breast. A course of chargrilled octopus introduces a taste of the Mediterranean’s coastal essence, balanced by a pairing that echoes its depth and freshness. The heart of the dinner, braised beef short ribs, offers a luxurious expression of comfort and sophistication. Finally, the evening concludes on a seasonal note with a dessert of dark chocolate and pumpkin, a harmonious finale that bridges richness with subtle spice.
